Gudeg.net – Bolivar, located at Jalan Sepakbola no.3, Seturan, Depok, Sleman, is not just a coffee shop, but also a space for collaboration.
The owner of Bolivar, Ilham Nandana, stated that this coffee shop embraces a simple and industrial style.
Speaking about the concept, Ilham explained that Bolivar focuses on the concept of South America as it is associated with freedom.
“We embrace the theme of freedom,” said Ilham during an interview with Gudegnet on Wednesday (15/12).
The name Bolivar itself is taken from the first president of Bolivia, as well as the name of the currency.
For the building design, Ilham drew inspiration from American architecture. The front of the coffee shop resembles a chicken coop in America.
Ilham wanted this place to have value and provide a space for collaboration and creativity for young people, with a simple and industrial style.
“When we want to collaborate and be free to create, we have to start with something as simple as possible,” he said.
There are various choices of furniture models in several areas: indoor, semi-outdoor, and outdoor, all with a simple style. According to Ilham, the simple style is associated with freedom.
This place is comfortable for working on something, with many power outlets available. There is also a prayer room.
Although starting from a simple style, Bolivar emphasizes artisanal products. According to Ilham, coffee is not just a commodity, but also art. Each barista has their own unique side, he added.
“We have our own recipe, our own copyright, and here we highly appreciate art. For us, the drinks we serve are like art,” he said.
El Palmar is the signature menu at Bolivar. It is a coffee with palm sugar. Bolivar only uses Arabica coffee.
As for the food menu, so far the rice bowl has become the best-selling menu in this coffee shop, which opened last month. There are choices of pad kra pao and udon rice bowls. Pad kra pao is a Thai-style chicken dish. In the future, there will be other variants of rice bowls.
Churros and nachos are the favorite side dishes on the menu.
“We always prioritize value for money,” said Ilham when talking about prices. The prices of drinks range from Rp 20,000 to Rp 26,000. In addition to coffee-based drinks, there will also be mocktails and tea-based products in the future.
On weekdays, the place is open from 9:00 a.m. to 11:00 p.m., while on weekends, it opens from 7:00 a.m. to 12:00 a.m.
In conclusion, Bolivar is not just a coffee shop, but also a space that embodies the concept of freedom and collaboration.
